Taste Sensations


Eating healthy can sometimes be a challenge. Why not try the following recipes for a taste sensation, without the challenge?

PASTA PRIMAVERA WITH ROASTED GARLIC SAUCE (Serves 4)

Brush each head of garlic lightly with 1 teaspoon of melted reduced-calorie margarine. Wrap each head separately in foil and place in a small baking pan. Bake at 400 degrees Fahrenheit for 45 minutes or until tender. Cool 10 minutes. Separate cloves, squeeze cloves to extract pulp, discard skins. In blender or food processor, puree garlic pulp, mustard, lemon juice, and pepper. Set aside.

In a skillet over medium-high heat, saute mushrooms, zucchini, and carrots in remaining spread until tender-crisp (about 3 minutes). Add garlic mixture, water, tomato and basil. Reduce heat to low. Cook and stir until sauce is heated through. Toss with hot cooked pasta and serve immediately.

GINGERBREAD WITH RASPBERRY SAUCE (Serves 9)

In large bowl, combine flour, baking soda, ginger, cinnamon and cloves. Set aside.

In a small bowl, combine milk, molasses, egg substitute, and margarine. Stir into flour mixture until smooth. Spread batter into greased 8x8x2-inch baking pan. Bake at 350 degrees Fahrenheit for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool slightly on wire rack.

Cut into 2 -1/2 inch squares, top with raspberry sauce and whipped topping.
