
LIGHTLY LEMON CHICKEN
One of our favorite recipes at Long Beach Community Medical Center is Lightly Lemon Chicken. This recipe is used for patients, in the cafeteria, and for catering services. The recipe is low fat, low cholesterol, and low sodium, but certainly not low on flavor.
3/4 cup fine bread crumbs 1 Tablespoon finely chopped parsley 4 small boneless chicken breasts (4 ounces each) 2 -3 eggs - separate and use only egg white 1 clove fresh garlic 3 Tablespoons margarine 1 lemon 1/4 cup low-sodium chicken broth Mix bread crumbs and parsley. Dip a chicken breast into the egg whites, then coat it with the bread crumb mixture.
In a skillet, over medium-high heat, cook garlic in margarine for one minute. Add chicken and brown on both sides. Cut the lemon in half, and slice one of the halves into thin slices. Arrange sliced lemon over chicken. Combine juice from the remaining lemon half with the low-sodium chicken broth. Pour this mixture into the skillet. Heat to a boil, then reduce heat. Cover and simmer 10 minutes or until the chicken is tender.
